Ingredients

  • 1 tablespoon olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can chicken broth
  • 1/2 cup milk
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 (16.3 oz) can refrigerated biscuit dough (8 count), cut into quarters

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the cream of chicken soup, chicken broth, milk, dried parsley, garlic powder, and black pepper until smooth.
  3. Stir in the cubed chicken and frozen mixed vegetables.
  4. Pour the mixture evenly into the prepared baking dish.
  5. Arrange the quartered biscuit dough pieces evenly over the top of the chicken mixture. They don’t need to be perfectly spread, some overlap is fine.
  6. Bake for 30-35 minutes, or until the biscuits are golden brown and cooked through, and the chicken mixture is bubbly.
  7. Let stand for 5 minutes before serving.
