Ingredients
- 1 tablespoon olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can chicken broth
- 1/2 cup milk
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 (16.3 oz) can refrigerated biscuit dough (8 count), cut into quarters
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, whisk together the cream of chicken soup, chicken broth, milk, dried parsley, garlic powder, and black pepper until smooth.
- Stir in the cubed chicken and frozen mixed vegetables.
- Pour the mixture evenly into the prepared baking dish.
- Arrange the quartered biscuit dough pieces evenly over the top of the chicken mixture. They don’t need to be perfectly spread, some overlap is fine.
- Bake for 30-35 minutes, or until the biscuits are golden brown and cooked through, and the chicken mixture is bubbly.
- Let stand for 5 minutes before serving.
