Sumac Potato Salad- Tangy & Delicious Twist

Ingredients

  • 2 lbs Yukon Gold or red potatoes, scrubbed and cut into 1-inch cubes
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons sumac, plus more for garnish
  • 1/4 cup finely chopped red onion
  • 1/2 cup finely chopped celery
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped (optional but recommended)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil over medium-high heat, then reduce heat and simmer until the potatoes are fork-tender, about 10-15 minutes. Be careful not to overcook.
  2. Drain the potatoes thoroughly and let them cool in the colander for about 5-10 minutes to allow any excess steam to escape. This prevents a watery salad.
  3. While the potatoes are cooling, prepare the dressing. In a large bowl, whisk together the mayonnaise (or yogurt), olive oil, lemon juice, sumac, Dijon mustard, and minced garlic (if using). Season with salt and pepper to taste.
  4. Add the slightly cooled potatoes to the bowl with the dressing. Gently fold them in until all the potatoes are evenly coated. Try not to mash them too much.
  5. Stir in the chopped red onion, celery, fresh parsley, and fresh mint (if using). Gently mix until everything is well combined.
  6. Taste and adjust seasonings if necessary, adding more salt, pepper, lemon juice, or sumac to your preference. The flavor will deepen as it chills.
  7. Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld. For best results, chill for 2-4 hours.
  8. Before serving, give it a final gentle stir and garnish with an extra sprinkle of sumac and a few fresh parsley or mint leaves. Serve chilled.
