Ingredients
- 5 large eggs
- 2 tablespoons finely diced carrot
- 2 tablespoons finely chopped green onion (scallion)
- 1 tablespoon finely diced bell pepper (any color, optional)
- 1/4 teaspoon salt
- Pinch of black pepper
- 1/2 teaspoon sugar (optional, for a hint of sweetness)
- 1 teaspoon mirin (optional, for flavor)
- 1 tablespoon vegetable oil (for cooking)
Instructions
- In a medium bowl, whisk the eggs until well combined. You want them just blended, not overly frothy.
- Add the finely diced carrot, chopped green onion, diced bell pepper (if using), salt, black pepper, sugar (if using), and mirin (if using) to the egg mixture. Whisk gently to combine all ingredients without creating too many air bubbles.
- Heat a non-stick frying pan (preferably square or rectangular, but a round 8-10 inch pan works too) over medium-low heat. Lightly brush or wipe the pan with vegetable oil.
- Pour about a quarter to a third of the egg mixture into the hot pan, tilting the pan to spread it into a thin, even layer that covers the bottom.
- As the egg sets but is still slightly moist on top (about 30-60 seconds), gently push one edge of the omelette towards the center and begin rolling it tightly using a spatula or chopsticks. Roll it about two-thirds of the way across the pan, leaving the last third unrolled.
- Push the rolled omelette to one side of the pan. Pour another quarter to a third of the egg mixture into the empty space in the pan, ensuring some of the new mixture goes underneath the rolled portion to ‘glue’ it together.
- Once this new layer is partially set, continue rolling the existing omelette over the new egg layer, incorporating it into the roll.
- Repeat steps 6 and 7 until all the egg mixture is used, creating a thick, multi-layered rolled omelette.
- Once the Gyeran Mari is fully rolled, cook for another 30 seconds to a minute on all sides to ensure it’s cooked through and slightly golden. Gently press down on the roll to make sure it’s firm.
