Easy Egg Fried Rice Recipe – Quick & Delicious Meal

Ingredients

  • 3 cups cooked day-old white rice (chilled is best)
  • 2 large eggs
  • 1 tbsp soy sauce (or to taste)
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil (or canola/peanut oil)
  • 1/2 cup frozen peas and carrots blend
  • 1/4 cup chopped green onions (white and light green parts, plus extra for garnish)
  • 1 clove garlic, minced
  • 1/2 inch ginger, grated (optional)
  • Pinch of white pepper (optional)
  • Salt to taste

Instructions

  1. In a small bowl, whisk the eggs with a pinch of salt and white pepper until well combined. Set aside.
  2. In another small bowl, combine the soy sauce and sesame oil. Set aside.
  3. Heat 2 tablespoons of vegetable oil in a large wok or a large non-stick skillet over medium-high heat until shimmering.
  4. Add the minced garlic and grated ginger (if using) and stir-fry for 15-30 seconds until fragrant, being careful not to burn the garlic.
  5. Push the garlic and ginger to one side of the wok. Pour the whisked eggs into the empty space and scramble until just set but still slightly moist. Break them into small pieces with your spatula.
  6. Add the cooked day-old rice to the wok along with the scrambled eggs. Break up any clumps of rice with your spatula and stir-fry for 2-3 minutes, ensuring the rice is heated through and lightly toasted.
  7. Stir in the frozen peas and carrots blend and the chopped green onions (reserving some for garnish). Continue to stir-fry for another 2-3 minutes, until the vegetables are tender-crisp.
  8. Pour the soy sauce and sesame oil mixture over the rice. Toss everything together vigorously to ensure the sauce evenly coats all the rice and ingredients.
  9. Taste and adjust seasoning if needed, adding more soy sauce or a pinch of salt if desired. Stir-fry for an additional minute.
  10. Remove from heat and serve immediately, garnished with extra chopped green onions.
