Ingredients
- 1 ½ cups (180g) all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Zest of 2 medium lemons
- 2 tablespoons fresh lemon juice
- For the Lemon Glaze (Optional):
- 1 cup (120g) powdered sugar
- 2-3 tablespoons fresh lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
- In a large bowl, using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg, vanilla extract, lemon zest, and fresh lemon juice until well combined. Scrape down the sides of the bowl as needed.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 9-11 minutes, or until the edges are lightly golden and the centers are just set. They may look slightly underbaked in the middle, but this helps achieve the soft and chewy texture.
- Remove from oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Optional Lemon Glaze: While cookies are cooling, whisk together the powdered sugar and 2-3 tablespoons of fresh lemon juice in a small bowl until smooth. The consistency should be pourable but thick enough to coat a spoon.
- Once cookies are completely cooled, drizzle or spread the lemon glaze over each cookie. Let the glaze set before serving.
