Ingredients

  • 3-4 medium zucchini, trimmed
  • 1 tablespoon olive oil (plus more for greasing)
  • 2 cups marinara sauce

  • 1 block (14-16 oz) firm or extra-firm tofu, pressed well
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt (or to taste)
  • Pinch of black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Prepare the zucchini: Using a mandoline or a sharp knife, carefully slice the zucchini lengthwise into thin strips (about 1/8 inch thick). Lay the slices on paper towels, sprinkle lightly with salt, and let sit for 10-15 minutes to draw out excess moisture. Gently pat dry with more paper towels.
  3. Make the tofu ricotta: Crumble the pressed tofu into a food processor. Add nutritional yeast, lemon juice, minced garlic, onion powder, salt, and pepper. Process until mostly smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning if necessary.
  4. Assemble the rollatini: Spread a thin layer of marinara sauce (about 1/2 cup) on the bottom of the prepared baking dish.
  5. Lay a zucchini strip flat. Spoon about 1-2 tablespoons of the tofu ricotta mixture onto one end of the zucchini strip, then gently roll it up.
  6. Place the rolled zucchini seam-side down in the baking dish. Repeat with the remaining zucchini strips and tofu ricotta.
  7. Pour the remaining marinara sauce over the zucchini rolls, ensuring they are well covered.
  8. Bake for 25-30 minutes, or until the zucchini is tender and the sauce is bubbling.
