Maroulosalata-Greek Lettuce Salad-Easy & Refreshing

Ingredients
- 1 large head of crisp romaine lettuce (or cos lettuce), washed and dried
- 1/2 cup fresh dill, finely chopped
- 3-4 green onions (scallions), white and light green parts, thinly sliced
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon sea salt (or to taste)
- 1/4 teaspoon freshly ground black pepper (or to taste)
- Optional: A few Kalamata olives for garnish
Instructions
- Prepare the lettuce: Remove any outer damaged leaves from the romaine lettuce. Wash the remaining leaves thoroughly under cold water and dry them completely using a salad spinner or by patting them dry with paper towels.
- Chop the lettuce: Stack the lettuce leaves and thinly slice them crosswise into ribbons (chiffonade style). Place the chopped lettuce in a large mixing bowl.
- Add fresh herbs: Add the finely chopped fresh dill and thinly sliced green onions to the bowl with the lettuce.
- Whisk the dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, sea salt, and black pepper until well combined.
- Dress the salad: Pour the dressing over the lettuce and herb mixture.
- Toss and serve: Gently toss the salad with clean hands or salad servers until all the ingredients are evenly coated. Taste and adjust seasoning if needed. Serve immediately as a refreshing side dish. Optional: Garnish with Kalamata olives.
