Ingredients

  • 1.5 lbs flank steak or sirloin, thinly sliced against the grain
  • 2 tbsp soy sauce (for marinade)
  • 1 tbsp cornstarch (for marinade)
  • 1/2 cup low-sodium soy sauce (for sauce)
  • 1/2 cup water (for sauce)
  • 1/2 cup dark brown sugar, packed (for sauce)
  • 1 tbsp fresh ginger, grated (for sauce)
  • 4 cloves garlic, minced (for sauce)
  • 1 tsp rice vinegar (optional, for sauce)
  • 1/4 cup vegetable oil (or other high-heat oil)
  • 3-4 green onions, chopped into 1-inch pieces (for garnish)

Instructions

  1. **Prepare the Beef:** In a medium bowl, combine the thinly sliced beef with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Toss to coat evenly and let it marinate for at least 10 minutes while you prepare the sauce.
  2. **Make the Sauce:** In a separate small bowl, whisk together the 1/2 cup low-sodium soy sauce, 1/2 cup water, 1/2 cup dark brown sugar, grated ginger, minced garlic, and rice vinegar (if using). Set aside.
  3. **Cook the Beef:** Heat 1/4 cup vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the marinated beef in a single layer, being careful not to overcrowd the pan (cook in batches if necessary). Cook for 2-3 minutes per side until browned and cooked through. Remove the cooked beef from the pan and set aside, leaving any excess oil in the pan.
  4. **Simmer the Sauce:** Reduce the heat to medium. Pour the whisked sauce mixture into the skillet. Bring to a gentle simmer, stirring constantly, and cook for 2-3 minutes until the sauce thickens and becomes glossy.
  5. **Combine and Serve:** Return the cooked beef to the skillet and toss to coat evenly with the thickened sauce. Stir in the chopped green onions.
  6. Serve immediately over steamed rice or noodles, garnished with extra green onions if desired.
