Ingredients

  • 2 medium zucchini (about 1.5 lbs), shredded
  • 1/2 teaspoon salt, plus more to taste
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 6 large eggs
  • 1/2 cup milk (whole or low-fat) or half-and-half
  • 1/2 cup shredded cheddar cheese (or Gruyere, Monterey Jack)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley or chives
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)
  • Cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie plate or a similar-sized baking dish with cooking spray or butter.
  2. Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a colander, sprinkle with 1/2 teaspoon salt, and let it sit for 10-15 minutes to draw out excess moisture.
  3. Firmly squeeze the zucchini in small batches with your hands or a clean kitchen towel to remove as much liquid as possible. This step is crucial for preventing a watery quiche.
  4. Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.
  5. In a large bowl, whisk together the eggs, milk (or half-and-half), black pepper, and optional nutmeg until well combined.
  6. Stir in the squeezed zucchini, cooked onion and garlic, shredded cheddar, grated Parmesan, and chopped fresh parsley or chives into the egg mixture. Mix thoroughly.
  7. Pour the mixture into the prepared pie plate, spreading it evenly.
  8. Bake for 35-45 minutes, or until the quiche is set in the center and lightly golden brown on top. A knife inserted into the center should come out clean.
  9. Let the quiche cool for 5-10 minutes before slicing and serving. This allows it to set fully.
