- 2 large eggs

- 1/2 teaspoon salt
- 2 tablespoons instant espresso powder (or finely ground instant coffee)
- 1 1/2 cups semi-sweet chocolate chips (good quality recommended)

Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or silicone mats.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy (about 2-3 minutes).
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, and instant espresso powder.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- Fold in the chocolate chips until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies. If desired, sprinkle a pinch of flaky sea salt on top of each cookie dough ball.
