Salted Brownie Cookies – Easy Fudgy Chewy Recipe

Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt (for the dough)
  • 1 cup (170g) chocolate chips or chunks (milk, semi-sweet, or dark)
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs one at a time, whisking well after each addition until the mixture is light and fluffy, about 1-2 minutes. Stir in the vanilla extract.
  4. Sift in the cocoa powder, flour, baking powder, and 1/2 teaspoon salt. Mix with a spatula or wooden spoon until just combined; be careful not to overmix.
  5. Fold in the chocolate chips until evenly distributed.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
  7. Bake for 9-12 minutes, or until the edges are set and the centers still look slightly soft.
  8. Immediately after removing from the oven, sprinkle each cookie generously with flaky sea salt.
  9. Let the cookies cool on the baking sheets for 5-10 minutes before transferring them to a wire rack to cool completely.
