  • 8 oz cream cheese, softened
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese (or a cheddar-jack blend)
  • 1/4 cup chopped green onions (optional)
  • 6-8 large (10-inch) flour tortillas

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Beat with an electric mixer or stir vigorously until smooth and well combined.
  2. Add the shredded chicken, crumbled bacon, shredded cheddar cheese, and chopped green onions (if using) to the cream cheese mixture. Stir until all ingredients are evenly distributed.
  3. Lay one flour tortilla flat on a clean surface. Spread about 1/2 to 3/4 cup of the chicken mixture evenly over the entire surface of the tortilla, leaving a small border around the edges.
  4. Starting from one end, tightly roll up the tortilla into a log. Repeat with the remaining tortillas and chicken mixture.
  5. Wrap each rolled tortilla log tightly in plastic wrap. Refrigerate for at least 1-2 hours, or preferably overnight, to allow the pinwheels to firm up and the flavors to meld.
  6. Once chilled, unwrap each tortilla log and slice it into 1/2 to 3/4-inch thick pinwheels using a sharp knife. Arrange on a serving platter and enjoy immediately.
