Ingredients

  • 1 lb 80/20 ground beef
  • 4 slices American or cheddar cheese
  • 4 cups chopped romaine lettuce (or your favorite greens)
  • 1/2 cup diced ripe tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup dill pickle chips or relish
  • 2 tbsp neutral oil (like canola or vegetable)
  • Salt and freshly ground black pepper to taste
  • For the Special Sauce:
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp finely minced dill pickle
  • 1 tsp white vinegar or pickle juice
  • 1/2 tsp garlic powder
  • Pinch of paprika

Instructions

  1. First, prepare your special sauce: In a small bowl, whisk together the mayonnaise, ketchup, yellow mustard, minced dill pickle, vinegar (or pickle juice), garlic powder, and paprika until smooth. Set aside.
  2. Divide the ground beef into 4 equal portions and gently form into loose balls – do not overwork the meat. Season generously with salt and pepper.
  3. Heat a large cast-iron skillet or heavy-bottomed pan over high heat until smoking. Add the neutral oil, ensuring it coats the bottom of the pan.
  4. Place the beef balls into the hot skillet, leaving space between them. Immediately use a sturdy metal spatula or burger press to firmly smash each ball down into a thin patty, about 1/4-inch thick. Press hard for 10-15 seconds to maximize surface contact for a crispy crust.
  5. Cook for 2-3 minutes until a deep brown crust forms on the bottom. Flip the patties, immediately place a slice of cheese on each, and cook for another 1-2 minutes until the cheese is melted and bubbly and the burger is cooked through.
  6. While the burgers cook, assemble your bowls: Divide the chopped romaine lettuce among 4 serving bowls. Top with diced tomatoes, sliced red onion, and dill pickles.
  7. Once the burgers are ready, carefully transfer a cheesy patty to each bowl. Drizzle generously with the prepared special sauce.
  8. Serve immediately and enjoy your flavor-packed Smash Burger Bowl!
