Instructions
- Wash, peel, and cut the potatoes into thick finger shapes (like French fries). Rinse them thoroughly in cold water to remove excess starch, then pat them completely dry with a clean kitchen towel.
- In a large bowl, combine the dried potato fingers with 1/2 cup cornflour, 1/4 cup rice flour, and 1 teaspoon salt. Toss gently until all the potato pieces are evenly coated.
- Heat oil for deep frying in a heavy-bottomed pan or wok over medium-high heat. Once hot, carefully add the coated potato fingers in batches. Fry until they are golden brown and perfectly crispy. Remove with a slotted spoon and place them on a paper-lined plate to drain any excess oil.
