  • 1-2 tablespoons oil (for sauce)
  • 1 tablespoon grated ginger
  • 1 tablespoon minced garlic
  • 2-3 green chilies, slit lengthwise (adjust to taste)
  • 2 tablespoons light soy sauce
  • 3-4 tablespoons honey (adjust to taste)
  • 1 tablespoon rice vinegar or white vinegar
  • 3 tablespoons tomato ketchup
  • 1/4 cup water
  • 1 tablespoon cornflour + 2 tablespoons water (for slurry)
  • Salt to taste (be mindful of soy sauce)
  • 1/2 teaspoon black pepper powder
  • 1/2 teaspoon chili flakes (optional)
  • 1 teaspoon toasted sesame seeds, for garnish
  • 2 tablespoons spring onion greens, chopped, for garnish

Instructions

  1. Wash, peel, and cut the potatoes into thick finger shapes (like French fries). Rinse them thoroughly in cold water to remove excess starch, then pat them completely dry with a clean kitchen towel.
  2. In a large bowl, combine the dried potato fingers with 1/2 cup cornflour, 1/4 cup rice flour, and 1 teaspoon salt. Toss gently until all the potato pieces are evenly coated.
  3. Heat oil for deep frying in a heavy-bottomed pan or wok over medium-high heat. Once hot, carefully add the coated potato fingers in batches. Fry until they are golden brown and perfectly crispy. Remove with a slotted spoon and place them on a paper-lined plate to drain any excess oil.
  4. In a separate wok or large pan, heat 1-2 tablespoons of oil over medium heat. Add the grated ginger, minced garlic, and slit green chilies. Sauté for about 30 seconds until fragrant.
