Refreshing Watermelon Cake Recipe- Sweet Summer Treat

Beat the summer heat with a delightfully unique and incredibly refreshing Watermelon Cake! This no-bake masterpiece uses a fresh watermelon as its base, topped with light, sweet whipped cream and a vibrant medley of fresh berries. Ingredients

  • 1 large, seedless watermelon
  • 2 cups heavy whipping cream, very cold
  • 1/2 cup powdered sugar (confectioners’ sugar)
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • Fresh mint leaves, for garnish

Instructions

  1. **Prepare the Watermelon:** Carefully cut both ends off the watermelon, creating a flat top and bottom. Stand the watermelon upright and carefully slice away the green rind, leaving a cylindrical shape of red flesh. Trim the sides to create a smooth, even “cake” shape, about 6-8 inches in diameter and 4-5 inches tall. Pat the watermelon dry with paper towels to remove excess moisture.
  2. **Make the Whipped Cream:** In a large, chilled mixing bowl, combine the very cold heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form. Be careful not to overbeat, or it will turn into butter.
