Ingredients
- 2 cups cooked chicken, shredded or finely diced
- 8 oz cream cheese, softened
- 1/2 cup sour cream (or plain Greek yogurt)
- 1 packet (1 oz) ranch seasoning mix
- 1/2 cup cooked bacon, crumbled
- 1 cup shredded cheddar cheese (or a cheddar-jack blend)
- 1/4 cup chopped green onions (optional)
- 6-8 large (10-inch) flour tortillas
Instructions
- In a large mixing bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Beat with an electric mixer or stir vigorously until smooth and well combined.
- Add the shredded chicken, crumbled bacon, shredded cheddar cheese, and chopped green onions (if using) to the cream cheese mixture. Stir until all ingredients are evenly distributed.
- Lay one flour tortilla flat on a clean surface. Spread about 1/2 to 3/4 cup of the chicken mixture evenly over the entire surface of the tortilla, leaving a small border around the edges.
- Starting from one end, tightly roll up the tortilla into a log. Repeat with the remaining tortillas and chicken mixture.
- Wrap each rolled tortilla log tightly in plastic wrap. Refrigerate for at least 1-2 hours, or preferably overnight, to allow the pinwheels to firm up and the flavors to meld.
- Once chilled, unwrap each tortilla log and slice it into 1/2 to 3/4-inch thick pinwheels using a sharp knife. Arrange on a serving platter and enjoy immediately.
