- 2 medium zucchini (about 1.5 lbs), shredded
- 1/2 teaspoon salt, plus more to taste
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 6 large eggs
- 1/2 cup milk (whole or low-fat) or half-and-half
- 1/2 cup shredded cheddar cheese (or Gruyere, Monterey Jack)
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley or chives
- 1/4 teaspoon black pepper
- Pinch of nutmeg (optional)
- Cooking spray or butter for greasing
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie plate or a similar-sized baking dish with cooking spray or butter.
- Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a colander, sprinkle with 1/2 teaspoon salt, and let it sit for 10-15 minutes to draw out excess moisture.
- Firmly squeeze the zucchini in small batches with your hands or a clean kitchen towel to remove as much liquid as possible. This step is crucial for preventing a watery quiche.
