- 2 large potatoes (about 1.5 lbs), peeled and grated
- 1 medium carrot, grated
- 1/2 medium onion, finely minced or grated
- 1/4 cup all-purpose flour (or gluten-free flour blend)
- 1 large egg, lightly beaten (optional, for extra binding)
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- Pinch of red pepper flakes (optional)
- 2-3 tbsp fresh parsley, chopped (optional)
- Vegetable oil for frying

- Prepare the vegetables: Peel and grate the potatoes and carrot. Finely mince or grate the onion.
- Squeeze out moisture: Place the grated potatoes in a clean kitchen towel or several layers of paper towels and squeeze out as much excess liquid as possible. This is crucial for crispy fritters!
- Combine ingredients: In a large bowl, combine the squeezed potatoes, grated carrot, minced onion, all-purpose flour, beaten egg (if using), garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using).
