Ingredients
- 3 medium apples (e.g., Gala, Fuji, Honeycrisp), peeled, cored, and diced
- 1 tbsp maple syrup or honey (optional, adjust to apple sweetness)
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tbsp water
- 1 cup rolled oats (gluten-free if preferred)
- 1/2 cup almond flour or whole wheat flour
- 2 tbsp maple syrup or honey
- 2 tbsp melted coconut oil or unsalted butter
- 1/4 tsp salt
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a small baking dish (e.g., an 8×8 inch dish or individual ramekins).
- Prepare the Apple Filling: In a medium saucepan, combine the diced apples, 1 tbsp maple syrup (if using), cinnamon, nutmeg, and water. Cook over medium heat for 5-7 minutes, stirring occasionally, until the apples soften slightly but still hold their shape. Remove from heat.
- Prepare the Crumble Topping: In a separate medium bowl, combine the rolled oats, almond flour, 2 tbsp maple syrup, melted coconut oil (or butter), and salt. Mix with a fork or your fingers until the mixture is crumbly and well combined.
- Pour the apple filling into the prepared baking dish.
- Evenly sprinkle the crumble topping over the apples.
- Bake for 20-25 minutes, or until the topping is golden brown and the apples are tender and bubbly.
- Let cool for a few minutes before serving. Enjoy warm, optionally topped with a dollop of Greek yogurt or a splash of milk.
