Ingredients
- 1 cup cooked and mashed sweet potato (from about 1 medium sweet potato)
- 1 ½ cups old-fashioned rolled oats
- ¾ cup whole wheat flour (or all-purpose flour)
- ½ cup unsweetened applesauce (or ¼ cup melted coconut oil for richer cookies)
- ¼ cup maple syrup or honey
- 1 large egg
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Pinch of ground ginger (optional)
- ¼ teaspoon salt
- ½ cup raisins, chopped walnuts, or dark chocolate chips (optional add-ins)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the mashed sweet potato, applesauce (or coconut oil), maple syrup, and egg until well combined and smooth.
- In a separate medium bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger (if using), and salt. Stir until all dry ingredients are evenly distributed.
- Add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. If using, fold in the raisins, walnuts, or chocolate chips.
- Drop spoonfuls of dough (about 1.5-2 tablespoons each) onto the prepared baking sheet, leaving some space between cookies. Gently flatten them slightly with the back of a spoon, as they won’t spread much.
- Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set. Baking time may vary depending on your oven and cookie size.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
