Lemon Blueberry Truffles – Easy Gourmet Dessert

Ingredients

  • 8 oz (226g) cream cheese, softened
  • 2 cups (240g) powdered sugar, sifted
  • Zest of 1 large lemon
  • 2 tbsp fresh lemon juice
  • 1/4 cup (60g) blueberry preserves or jam (seedless preferred)
  • 1/2 tsp vanilla extract (optional)
  • 10 oz (280g) good quality white chocolate chips or chopped white chocolate
  • 1 tsp coconut oil (optional, for smoother chocolate)
  • Extra lemon zest or freeze-dried blueberry powder for garnish (optional)

Instructions

  1. In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Gradually add the sifted powdered sugar, beating until fully combined and no lumps remain.
  3. Stir in the lemon zest, lemon juice, blueberry preserves, and vanilla extract (if using) until the mixture is uniform in color and texture.
  4. Cover the bowl and refrigerate the mixture for at least 1-2 hours, or until firm enough to roll. This is crucial for easy handling.
  5. Line a baking sheet with parchment paper. Using a small cookie scoop or your hands, roll the chilled mixture into 1-inch balls. Place them on the prepared baking sheet.
  6. Return the rolled truffles to the refrigerator or freezer for another 30 minutes to firm up again while you prepare the chocolate coating.
  7. In a microwave-safe bowl, combine the white chocolate chips (or chopped chocolate) and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted. Be careful not to overheat.
  8. One by one, dip each truffle into the melted white chocolate. Use a fork or a dipping tool to gently tap off excess chocolate, then place the dipped truffle back onto the parchment-lined baking sheet.
  9. Immediately sprinkle with extra lemon zest or freeze-dried blueberry powder, if desired, before the chocolate sets.
  10. Refrigerate the truffles for at least 20-30 minutes, or until the chocolate coating is completely set. Store in an airtight container in the refrigerator for up to 1 week.
