Ingredients
- 4 large Russet potatoes (about 1.5-2 lbs total)
- 1 tbsp olive oil, plus extra for rubbing
- 1 tbsp unsalted butter
- 1 lb cremini (baby bella) mushrooms, thinly sliced
- 1/2 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup heavy cream or milk
- 1/4 cup sour cream or Greek yogurt
- 1/2 cup shredded sharp cheddar cheese, plus more for topping
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh chives, chopped (plus more for garnish)
- 1/2 tsp dried thyme
- Salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes clean and pat dry. Pierce each potato several times with a fork. Rub lightly with olive oil and sprinkle with salt. Place directly on the oven rack and bake for 60-75 minutes, or until very tender when squeezed.
- While potatoes are baking, prepare the mushroom filling. Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and turn golden brown, about 8-10 minutes. Remove mushrooms from the pan and set aside.
- Reduce heat to medium. Add the chopped onion to the same skillet and cook until softened, about 3-5 minutes. Add the minced garlic and dried thyme, cooking for another minute until fragrant.
