Sumac Potato Salad- Tangy & Delicious Twist

Ingredients
- 2 lbs Yukon Gold or red potatoes, scrubbed and cut into 1-inch cubes
- 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
- 1/4 cup extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 2 tablespoons sumac, plus more for garnish
- 1/4 cup finely chopped red onion
- 1/2 cup finely chopped celery
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped (optional but recommended)
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Place the cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil over medium-high heat, then reduce heat and simmer until the potatoes are fork-tender, about 10-15 minutes. Be careful not to overcook.
- Drain the potatoes thoroughly and let them cool in the colander for about 5-10 minutes to allow any excess steam to escape. This prevents a watery salad.
- While the potatoes are cooling, prepare the dressing. In a large bowl, whisk together the mayonnaise (or yogurt), olive oil, lemon juice, sumac, Dijon mustard, and minced garlic (if using). Season with salt and pepper to taste.
- Add the slightly cooled potatoes to the bowl with the dressing. Gently fold them in until all the potatoes are evenly coated. Try not to mash them too much.
- Stir in the chopped red onion, celery, fresh parsley, and fresh mint (if using). Gently mix until everything is well combined.
- Taste and adjust seasonings if necessary, adding more salt, pepper, lemon juice, or sumac to your preference. The flavor will deepen as it chills.
- Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld. For best results, chill for 2-4 hours.
