  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced

  • 2-4 tbsp warm water or coconut milk (to thin)
  • 1 head butter lettuce, romaine, or iceberg lettuce, leaves separated
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 2 green onions, thinly sliced
  • 1/4 cup chopped roasted peanuts (for garnish, optional)

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Cook for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Remove from skillet, let rest for 5 minutes, then shred or dice. Set aside.
  2. Prepare the Peanut Sauce: In a medium bowl, whisk together peanut butter, soy sauce, lime juice, honey, rice vinegar, grated ginger, minced garlic, and sriracha until smooth.
