Sweet Potato Oatmeal Cookies-Healthy & Delicious Treats

Ingredients

  • 1 cup cooked and mashed sweet potato (from about 1 medium sweet potato)
  • 1 ½ cups old-fashioned rolled oats
  • ¾ cup whole wheat flour (or all-purpose flour)
  • ½ cup unsweetened applesauce (or ¼ cup melted coconut oil for richer cookies)
  • ¼ cup maple syrup or honey
  • 1 large egg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of ground ginger (optional)
  • ¼ teaspoon salt
  • ½ cup raisins, chopped walnuts, or dark chocolate chips (optional add-ins)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the mashed sweet potato, applesauce (or coconut oil), maple syrup, and egg until well combined and smooth.
  3. In a separate medium bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger (if using), and salt. Stir until all dry ingredients are evenly distributed.
  4. Add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. If using, fold in the raisins, walnuts, or chocolate chips.
  5. Drop spoonfuls of dough (about 1.5-2 tablespoons each) onto the prepared baking sheet, leaving some space between cookies. Gently flatten them slightly with the back of a spoon, as they won’t spread much.
  6. Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set. Baking time may vary depending on your oven and cookie size.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
  8. Store leftover cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
