Ingredients
- 4 cups dashi (Japanese soup stock)

- 4 oz silken tofu, cut into 1/2-inch cubes
- 2 green onions, thinly sliced
- 1 sheet nori (dried seaweed), cut into small strips or torn
- Optional: 1/2 cup dried wakame seaweed, rehydrated
Instructions
- Prepare the dashi: If using instant dashi granules, dissolve 1-2 teaspoons in 4 cups of hot water according to package directions. If using dashi packs, steep them in hot water as directed.
- Gently heat the dashi: Pour the dashi into a medium pot and heat over medium heat until it just begins to simmer. Do not bring to a rolling boil.
- Dissolve the miso paste: In a small bowl, scoop out 3-4 tablespoons of miso paste. Add a ladleful of the hot dashi from the pot to the miso paste and whisk until completely smooth and dissolved. This prevents the miso from clumping in the soup.
- Combine miso with dashi: Pour the dissolved miso mixture back into the pot with the dashi. Stir gently to combine. *Crucially, do not boil the soup after adding the miso, as boiling can destroy the delicate flavor and beneficial probiotics of the miso.*
- Add tofu and wakame (if using): Carefully add the cubed silken tofu and rehydrated wakame (if using) to the pot. Let them heat through for 1-2 minutes.
