Ingredients

  • 2 cups (180g) rolled oats (gluten-free if needed)
  • 1 tsp baking powder
  • 1/2 tsp baking soda

  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup (120ml) unsweetened applesauce
  • 1/2 cup (120ml) maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1 1/2 cups (about 2 medium) shredded carrots
  • Optional: 1/2 cup raisins or chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour (with oat flour or non-stick spray) an 8×8 inch square baking pan or a 9-inch round cake pan.
  2. In a food processor or high-speed blender, process the rolled oats until they resemble a fine flour.
  3. In a large mixing bowl, whisk together the oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a separate medium bowl, whisk the eggs, applesauce, maple syrup, and vanilla extract until well combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Gently fold in the shredded carrots and any optional raisins or walnuts.
  7. Pour the batter evenly into the prepared baking pan.
